In our house Italian and Mexican foods reign supreme! We have a dozen variations on pizza and tacos, including chicken burritos, fajitas, nachos, Navajo tacos, taco salad, taco turnover, Mexican pizza, taco pizza, pizza sticks, pizza pasta, and pizza monkey bread. I should have know it was only a matter of time until one of the kiddos wanted to try pizza nachos.
We made our pizza nachos by spreading a layer of tortilla chips on a cookie sheet, then drizzling jarred spaghetti sauce over them before adding slices of pepperoni and shredded mozzarella cheese on top. We broiled them for about five minutes until the cheese melted and started turning a little brown.
They tasted pretty good, but next time we’ll serve the spaghetti sauce on the side because they made the chips a little soggy. Any other suggestions for improvement?
